Josefina Velázquez de León was one of Mexicos premier cooking authorities during the first half of the twentieth century. Founder of a prestigious culinary institute in Mexico City that established her as a treasured teacher, Josefina was also a prolific cookbook author and owner of her own publishing company where she published over 140 titles. However, Josefinas real legacy comes as a result of her determination to research, collect, and protect authentic and regional food and traditions, a labor that shaped what we know today as Mexican cuisine. |
